AN EASY YET ELEGANT MOTHER’S DAY BRUNCH

With Mother’s Day a week away and going to your favorite restaurant for brunch not an option this year, we have a suggestion for a simple yet elegant brunch to honor that special person. What a wonderful way for her to start off the day!

Our brunch menu starts with our Spice For Life Bloody Mary made with our own newly created Bloody Mary Spice Blend, which adds a little heat and smoky flavor to the classic drink. This is followed by your choice of two different frittatas, one with lox and one with sausage, accompanied by avocado toast made with our very popular everything bagel blend. We conclude with our twist on Katherine Hepburn’s brownies, there was certainly a no more elegant lady than she.

Spice For Life’s Bloody Mary

  • Prep time: 5 minutes; Difficulty: Easy;
  • Serves: 4

Ingredients:

Directions:

1 Mix all ingredients together in a pitcher

2. Put ice into glasses and pour in Bloody Mary mixture

3. Put celery stalk, pickle spear or pickled green bean into the glass and serve

Lox, Arugula, Chives, and Goat Cheese Frittata

  • Prep time: 15 minutes; Cook time: 15-20 minutes; Difficulty: Easy;
  • Serves: 4

Ingredients:

  • 6-8 eggs
  • 6 oz. Lox, chopped into small pieces
  • 2 oz. Goat cheese, crumbled
  • 2 oz. Arugula
  • 1-2 tsp. Dried chives

  • ½ tsp. White peppercorns, ground
  • 1 tsp. Hungarian sweet paprika
  • ½ tsp. Lemon peel
  • Salt to taste (note: lox tends to be salty)
  • 1-2 TBS. Olive oil or butter

Directions:

1. Pre-heat oven to 350 degrees

2. In a medium size bowl beat the eggs

3. Add in cheese and all the spices

4. In an oven proof nonstick skillet, heat the olive oil or butter over medium heat.

5. Add arugula and sauté for 1-2 minutes until arugula starts to wilt.

6. Add into skillet egg, cheese and spice mixture and combine well.

7. Let entire mixture set in skillet for 1-2 minutes.

8. Place skillet in oven for 15-20 minutes until eggs are set.

9. Slide onto cutting board, cut into pie shaped slices and serve.

Sausage, Red pepper, Spinach, Tomato, and Cheese Frittata

  • Prep time: 20 minutes; Cook time: 15-20 minutes; Difficulty: Easy;
  • Serves: 4

Ingredients:

  • 6-8 Eggs
  • ½ lb. Sausage (personal preference)
  • 1 small Red pepper, chopped
  • 1 Shallot, chopped
  • 12 Cherry tomatoes, cut in half
  • ½- ¾ Cheddar or Swiss cheese, shredded
  • 2 oz. Spinach, chopped
  • 1-2 TBS. Pizza Blend
  • ½ tsp. Salt (or more to taste)
  • ½ tsp. Black Tellicherry peppercorns, ground
  • 2-3 TBS. Olive oil or butter

Directions:

1. Pre-heat oven to 350 degrees

2. In cast iron pan, cook sausage under medium high heat until brown, then remove and cut into ½ -inch pieces.

3. Add 1 TBS. olive oil or butter into the pan and cook red pepper and shallot under medium heat until starts to get soft.

4. In a medium size bowl beat the eggs.

3. Add into the bowl cheese, spices, tomatoes, and spinach.

4. In an oven proof nonstick skillet, heat remaining olive oil or butter over medium heat. Add sausage, shallot, and red pepper. Then add egg mixture and combine well, making sure all ingredients are equally distributed.

5. Let entire mixture set in skillet for 1-2 minutes.

6. Place skillet in oven for 15-20 minutes until eggs are set.

7. Slide onto cutting board, cut into pie shaped slices and serve.

Avocado Toast with Everything Bagel Blend

  • Prep Time: 10 minutes; Difficulty: Easy;
  • Serves: 4

Ingredients:

  • 1 medium Ripe avocado (but not mushy)
  • 4 pieces hearty thick multigrain or whole wheat bread
  • 1 large clove Garlic, peeled and halved
  • 1 TBS. Everything Bagel Blend ( or more to taste)
  • A pinch of salt

Directions

1. Cut avocado in half and remove pit.

2. Spoon avocado into a bowl and add mush it well with a folk.

3. Add a pinch of salt

4. Toast bread well until golden brown.

5. Rub garlic on one side of each piece of toast, until you can smell it on the bread.

6. Distribute the avocado mixture onto the 4 pieces of bread

7. Sprinkle the 1 TBS. of Everything Bagel evenly on top of the 4 pieces of bread

8. Serve and add more Everything Bagel blend if desired.

Katherine Hepburn Brownies with a Spice For Life Twist

  • Prep time: 10 minutes; Cook time: 30-35; Difficulty: Easy;
  • Serves: 8

Ingredients:

  • ¼ c All-purpose flour
  • 1 c Sugar
  • ½ c Organic cacao
  • ½ c Unsalted butter (1 stick)
  • 2 Eggs
  • 1 c Walnuts or pecans, chopped or broken into pieces
  • 1 tsp. Vanilla extract
  • Pinch of salt

Directions:

1. Pre-heat oven to 325 degrees

2. Line a 8 X 8 cake pan with foil and butter foil thoroughly

3. Mix nuts, flour, and pinch of salt in a bowl.

4. Melt butter in a microwave, using a medium size bowl

5. Blend in cacao powder and let cool for a few minutes.

6. Add sugar, stirring until well mixed.

7. Add vanilla, then eggs, one at a time, beating until glossy.

8. Fold in flour and nut mixture until just mixed.

9. Spread in prepared cake pan and bake in middle of the oven for 30 -35 minutes. Do not over bake. Brownies will still be very fudgy.

10. Cool for 2 hours, and then cut and serve.
