Finally, your hard work in the garden is coming to fruition. The vegetables and herbs are growing and about ready to be picked! But now what do you do with this abundant crop of summer vegetables? Spice For Life has two recommendations for you of some of our favorite and easy vegetable recipes.
One suggestion is a Greek tomato, cucumber, and feta cheese salad; and the other is grilled vegetable skewers.
Tomatoes and cucumbers are some of the most prolific and popular summer vegetables. They are great to put in a salad on a hot summer day. Our salad only takes 15 minutes to make. It can be done right before serving or made a couple hours ahead of time and placed in the refrigerator. Sweet cherry tomatoes are the best ones to use, giving the most flavor to this salad, along with the fresh garden herbs of either mint or basil, both plentiful this time of year. The addition of dry Mediterranean oregano and freshly ground black peppercorns compliments the fresh herbs and provides a little bite. The cucumber adds the crunchiness and the salad is rounded out by the creamy tangy flavor of the crumbled feta cheese. It is best to use French feta because of its mellow quality. Together all the ingredients make a delightful summer salad.
Putting together a cornucopia of summer vegetables on a skewer to grill is a wonderful way to use all those summer vegetables in your garden. You can use a whole variety of vegetables, such as: zucchini (one of those vegetables that just seems to keep on giving), eggplant, yellow squash, tomatoes, red or green peppers, and onions. We suggest marinating the vegetables for 30 minutes with olive oil, balsamic vinegar, and the piece de resistance, our Za’atar spice blend. Za’atar is a Middle Eastern and North African aromatic tart spice blend, which is excellent on vegetables. And don’t forget to soak the wooden skewers in cold water before using them.
