Chocolate Bavarian Cream Pie
Ingredients
1 9” Baked pie crust, or baked chocolate cooky crumb crust (purchased or homemade), cooled.
1 ¾ c.Whole milk
1 envelope Unflavored gelatin
2/3 c. Granulated sugar
6 TBS. Cacao powder
1 TBS.Light corn syrup
2 TBS. Unsalted butter
¾ tsp. Pure vanilla extract
1 c. Heavy (whipping) cream
Chocolate curls for garnish (optional)
Directions
Pour 1 cup milk into a small saucepan, and sprinkle with unflavored gelatin. Allow mixture to stand for 5 minutes to soften gelatin.
Combine sugar and cacao powder and stir it into the milk and gelatin mixture. Add corn syrup. Over medium heat, bring the mixture to a boil, stirring constantly.
When the mixture boils, remove it from heat and add the butter, stirring until melted, then add the vanilla and remaining ¾ cup of milk.
Pour mixture into a large bowl, and cool to room temperature. Chill in refrigerator until chocolate mixture is very thick and almost set.
Whip cream until stiff. Whisk chocolate mixture until smooth. Fold ½ of whipped cream into chocolate mixture until well incorporated. Reserve the other half of the whipped cream for serving.
6. Chill until set. When the pie is almost set, use a butter knife or spoon to swirl the top of the pie.
Garnish with chocolate curls, if desired. Serve each slice with a spoonful of whipped cream.
