Ingredients
1 package (11 oz.) Vanilla wafers, crushed into fine crumbs
¾ c. Confectioners’ sugar
¼ c. Organic Cacao powder
1 tsp. Vietnamese cinnamon, ground
1 ½ c. Pecans, finely chopped
3 TBS. Light corn syrup
½ c. Bourbon (can substitute rum or brandy if preferred)
Extra confectioner’s sugar to roll bourbon balls in
Directions
1. Combine crushed vanilla wafers, confectioners’ sugar, cacao, cinnamon and chopped nuts in a large bowl.
Stir in corn syrup and bourbon until thoroughly mixed. If mixture is too dry to form into balls, add a small additional quantity of bourbon to moisten the mixture.
Form into 1-inch balls, and roll them in confectioners’ sugar.
Place in airtight container, with layers separated by waxed paper or parchment, to age for at least 1 week.
Recipe Notes
Best when aged for at least a week.
Can substitute orange juice and 1-2 teaspoons finely grated orange zest for a non-alcoholic confection.
