Fattoush Salad
A wonderful fresh and herby Fattoush Salad

Ingredients
1 head of romaine Lettuce, tear into smaller pieces
½ large bunch Flat parsley
10 large Basil leaves
½ Red onion
4-6 Radishes
½ English cucumber
2 large Tomatoes
2 pieces Pita bread
1 tsp. Sumac
2 tsp. Za’atar
2 tsp. Dried mint
½ tsp. Sel Gris salt
¼ tsp. Tellicherry Black Peppercorns, freshly ground
¼ cup extra virgin olive oil
Juice from 2 freshly squeezed lemons
Directions
Place pieces of romaine lettuce into large salad bowl.
Chop up parsley, basil, green pepper, tomatoes, and red onion add to salad bowl.
Slice cucumber and radishes into thin slices and add to salad bowl.
Add salt and pepper (more to taste).
Add 1 tsp. of dry mint.
Mix everything together.
Make the Dressing
in a small bowl mix together olive oil, lemon juice, and sumac.
Finish the Salad
Pour over salad and mix together,
Heat up cast iron pan over medium heat.
Lightly rub both pieces of pieta bread (both sides) with a couple drops of olive oil and rub on Za’atar on both sides of bread.
Heat up both sides of bread in pan for a few minutes; then remove to cutting board and cut into small triangular pieces, and place along the inside of salad bowl.
Serve Immediately.
