Fresh Peach Pie with Cardamom

A hint of ground cardamom complements fresh peaches in this summer fruit pie. If you like a stronger cardamom flavor, increase the spice by ¼ - ½ teaspoon – but too much will overwhelm the peaches. Allow at least 3 hours of cooling so that pie is set. Serve plain, with whipped cream, or vanilla ice cream. Fruit pies keep well at room temperature for a couple of days, and after that should be refrigerated.
