Potato Latkes with a Southern Flare

Ingredients
5 lbs. of Sweet potatoes, grated
1 lb. Russet potatoes, grated
2 medium Onions, medium finely chopped
2 Jalapenos, finely diced
½ c, Green onions, finely diced
½ bunch Cilantro, finely chopped
½ c. Potato flour
2 TBS. baking powder
2 TBS. Cajun Seasoning
1 ½ TBS. Ancho chili, ground
4 large Eggs, lightly beaten
Vegetable oil for frying
Sour cream

Directions
Combine sweet potatoes, russet potatoes, onions, jalapenos, green onions, and cilantro and place in colander and press out all liquid.
Combine potato mixture with potato flour, baking soda, Cajun Seasoning, Ancho chili, and eggs.
Preheat oven to 200°F.
Heat ¼ inch oil to 360°F in a 12-inch heavy skillet over medium heat.
Using a ¼-cup measure, scoop 4 or 5 mounds of potato mixture into skillet. Flatten with a fork to form 3 ½ - to 4-inch pancakes.
Cook until golden brown, 2 ½ to 3 minutes per side.
Transfer to a paper-towel-lined baking sheet and keep warm in oven while making more latkes.
Recipe Notes
1. Make sure you have your kitchen exhaust fan on high.
2. Latkes can be made 2-3
hours ahead of time. Reheat in a 450°F oven (about 5 minutes) or until golden
brown and crispy.
