Thai cuisine has a unique blend of herbs and spices that have a little heat. A major ingredient is often lemongrass, which has a spicy, tart, citrusy flavor. This blend can be used as a rub on meat, chicken (especially chicken wings), and fish or sprinkled on vegetables or noodles. Combined with coconut milk it makes an excellent marinade.
